Almond Butter Energy Bites
 

1 cup dates
3 tbsp almond butter 
1/4 cup cacao powder (or 1tbsp cacao nibs)

1 tbsp spirulina

1 tbsp goji berries

1 tbsp hemp seeds
2/3 cup oats

Blend dates in food processor until pieces form a ball 
Add oats, cacao, hemp seeds, spirulina, goji berries, and almond butter 
Mix until combined (you may need to add more almond butter for consistency)
Roll mixture into balls or flatten in pan for bars

Enjoy!!

No-Bake Cookie Dough Bites {Raw, Gluten-Free, Dairy-Free, Egg-Free, Peanut-Free}

Yield: Makes about a dozen, depending on size

Ingredients

  • 1 cup (5 ounces) unsalted cashews

  • 1/2 cup (1.75 ounces) old-fashioned rolled oats (use gluten-free oats, if needed)

  • 1/4 teaspoon salt

  • 1/8 teaspoon ground cinnamon

  • 3 tablespoons pure maple syrup

  • 1/2 tablespoon pure vanilla extract

  • 1/4 cup (1.5 ounces or so) mini chocolate chips (use dairy-free chocolate chips, if needed)

Directions

  1. In a food processor, add the cashews, oats, salt and cinnamon and process until the mixture is finely ground (but don't over process until it becomes a paste!).

  2. Add the maple syrup and vanilla, and process until the dough forms a cohesive ball; this might take longer than you think. It should do more than just "come together," the dough should stick together in one large mass.

  3. Remove the blade from the food processor and add the chocolate chips, kneading them in with your hands.

  4. Scoop out tablespoon-size portions of dough and roll into balls with your hands. Refrigerate to firm up a bit or eat immediately.

Kale Chips 

 

Ingredients 
· 1 bunch Organic Baby Kale 
· 1 tablespoon Extra Virgin Olive Oil 
· Sea Salt 
· Black Pepper 

· Garlic Powder

 
Directions 
Preheat an oven to 350 degrees F.  
With a knife or kitchen shears carefully remove the leaves from the thick stems and tear into bite size pieces. Wash and thoroughly dry kale with a salad spinner. Drizzle with olive oil and sprinkle with salt, pepper and garlic. Bake until the edges brown but are not burnt, 10 to 15 minutes.
